What Did You Do with your Turkey Leftovers?

Lyn Cote here-For a change of pace, how about a recipe today? One of my own based on the classic, “Bisquick Impossible Pie” concept. My title: Turkey & Dressing Leftover Pie (Or Quiche–if you want to sound classy. 

Ingredients:

1/2 -3/4 lb turkey chunks
1-2 cups dressing, chunks (If you don’t have any left, substitute 1/4 tsp sage (or poultry seasoning)
1 cup shredded cheese
1/2 cup each of finely chopped onion and celery (you can chop extra when you’re doing your regular dressing prep)
1/2 c Bisquick Baking Mix™
2 cups milk (can use skim–whatever)
4 eggs
1/4 tsp salt
1/8 tsp black pepper
1/2 tsp thyme

Directions:

Preheat oven to 350 F.
Lightly grease or spray a large pie plate OR 10” oven-safe skillet
Sprinkle first 4 ingredients onto bottom of pan evenly.
Combine remaining ingredients and either blend or mix thoroughly.
Pour into pan. Bake for 50-60 minutes until golden brown or a knife comes out clean.
Let stand for 5 minutes before serving.

Serve with turkey gravy. Out of gravy? Have Better than Bouillon Turkey Base™ on hand and make what you need. (Recipe on the label–restaurants use this product- you won’t know it’s from a base.)

My husband gladly ate this for a supper and two lunches. So it’s a keeper!
